Description

A simple, flavorful dough that rises in just 20 minutes (or longer for deeper flavor), delivering a chewy interior and crisp golden crust—perfect for homemade pizzas, calzones, or flatbreads.


Ingredients

1½ cups (360 ml) warm water (105–110 °F)

2¼ tsp (1 packet) active dry yeast

1 Tbsp granulated sugar

2 tsp kosher salt

3 Tbsp olive oil

4 cups bread flour (or all-purpose; low-gluten options: use some Tipo 00)


Instructions

In a mixing bowl or stand mixer, combine warm water, yeast, and sugar. Let sit ~3 minutes until foamy.

If using sponge method: add 1 cup flour, stir, and rest 30 min (optional for flavor).

Add salt, olive oil, and remaining flour gradually. Mix until dough forms.

Knead by hand (~7–8 min) or with mixer until smooth and slightly sticky.

Shape into a ball; place in lightly oiled bowl, cover and let rise 20 min (or 1–2 hrs for deeper taste).

Punch down dough, divide into 2 balls (makes two 12″ pizzas).

Roll or stretch dough into desired shapes.
