Liquids & Canned Goods

  • 2 tbsp olive oil
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth

Instructions

  1. Heat the oil: Place a large pot over medium heat and add 2 tablespoons of olive oil to warm it up, preparing it for sautéing the aromatics.
  2. Sauté onion and garlic: Add the diced onion and minced garlic to the pot. Cook for a few minutes until they become fragrant and soften, releasing their flavors.
  3. Add vegetables: Stir in the sliced carrots, chopped celery, and diced zucchini. This helps to lightly cook the vegetables and blend their flavors.
  4. Add liquids and seasoning: Pour in the can of diced tomatoes along with their juices and the 6 cups of vegetable broth. Sprinkle in 1 teaspoon of dried Italian seasoning for flavor.
