Description

These warm, fluffy Bisquick sausage, egg, and cheese muffins bake up golden on the outside and soft on the inside. Loaded with protein and cheesy goodness, they make the perfect make-ahead breakfast or snack.

Ingredients

Bisquick Mix:

  • 2 cups

Eggs:

  • 4 large

Milk:

  • 1 cup

Breakfast Sausage Crumbles:

  • 1 cup cooked

Cheddar Cheese (shredded):

  • 1 cup

Green Onions (chopped, optional):

  • 1/4 cup

Salt and Pepper:

  • To taste

Instructions

  1. Preheat oven: to 375 °F (190 °C). Grease a 12-cup muffin tin or line with paper liners.
  2. Whisk eggs and milk: together in a large bowl until smooth.
  3. Stir in Bisquick mix: until just combined (do not overmix).
  4. Fold in sausage, cheese, green onions, salt, and pepper.
  5. Divide batter: evenly among muffin cups (about ¾ full).
  6. Bake: for 20–23 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool slightly: before removing from pan. Serve warm or store for meal prep.

Notes

  • Substitute bacon or ham for the sausage if desired.
  • Great to freeze — reheat in the microwave for 30–45 seconds or in the oven at 325 °F for 10 minutes.
  • Add a dash of hot sauce or paprika for extra flavor.
