This Fluffy Keto Cottage Cheese Cloud Bread is a light, airy bread made from eggs, cottage cheese, and protein powders, perfect for anyone on a keto or low-carb diet. It’s easy to make, versatile, and can be used for sandwiches or enjoyed toasted with butter.
Ingredients
6 eggs, separated (room temperature)
½ teaspoon white vinegar
4 ounces cottage cheese
½ teaspoon baking powder
¼ teaspoon salt
¾ cup whey protein powder
¼ cup egg white protein powder
1 tablespoon Allulose (optional)
Optional toppings: bagel seasoning
1 teaspoon vanilla extract (optional for French Toast)
Instructions
Step 1: Preheat Oven and Prep Egg Whites
Preheat your oven to 300°F (150°C).
Place the egg whites in a stand mixer or use an electric hand mixer along with a splash of white vinegar.
Whip the egg whites on high speed until stiff peaks form, about 10-15 minutes. Set the egg whites aside.
Step 2: Combine Egg Yolks and Remaining Ingredients
In a separate bowl, place the egg yolks, cottage cheese, baking powder, salt, whey protein powder, egg white protein powder, and Allulose (if using).
Whisk everything together until well combined. You can also blend the mixture for a smoother texture.
For French toast variation, add vanilla extract to the egg yolk mixture.
Step 3: Fold Mixtures Together
Gently fold a small amount of the egg yolk mixture into the whipped egg whites.
Continue folding in small portions, making sure to keep the mixture airy and light.
Step 4: Pour and Bake
Pour the combined mixture into a greased 5″x9″ loaf pan lined with parchment paper.
If making rolls, use a parchment-lined baking sheet or silicone mold pan.
Place the pan on the middle shelf of the preheated oven and bake for 50 minutes, or until a toothpick or skewer inserted in the center comes out clean and the top is golden brown.
Step 5: Rest and Serve
Once the baking time is up, turn off the oven but do not open the door. Allow the loaf or rolls to rest in the oven for an additional 10 minutes.
After this, remove from the oven and let it cool slightly.
Step 6: Enjoy
Enjoy the bread warm, toasted with a little butter, or use it for sandwiches once cooled.
Notes
Optional Toppings: Sprinkle bagel seasoning on top before baking for added flavor.
For French Toast: Add 1 teaspoon of vanilla extract to the egg yolk mixture for a sweet, French toast variation.
Storage: Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
