Description
A rustic French-inspired chicken dish simmered in a rich garlic and herb cream sauce. This comforting meal pairs beautifully with crusty bread or mashed potatoes, delivering a deliciously creamy and savory experience that highlights tender bone-in chicken thighs infused with fresh thyme and parsley.
Ingredients
Chicken
- 4 bone-in, skin-on chicken thighs
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
Sauce
- 8–10 garlic cloves, lightly smashed
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme leaves
- 1 tablespoon fresh parsley, chopped
Instructions
- Season Chicken: Season the chicken thighs generously with salt and black pepper on both sides to enhance their natural flavor.
- Heat Fat: In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and the mixture is hot but not smoking.
- Sear Chicken: Place the chicken thighs skin-side down in the skillet and sear until the skin is golden brown and crispy, about 5 to 6 minutes. Then flip and cook the other side for another 4 minutes before removing the chicken from the pan and setting it aside.
- Sauté Garlic: Add the lightly smashed garlic cloves to the skillet and sauté for 1 to 2 minutes until fragrant, making sure not to burn the garlic to avoid bitterness.
- Make Sauce: Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and fresh thyme leaves to create a rich and flavorful sauce.
- Simmer Chicken: Return the chicken thighs to the skillet, cover it with a lid, and reduce the heat to a gentle simmer. Cook for 20 to 25 minutes, or until the chicken is cooked through and tender.
- Garnish and Serve: Once cooked, sprinkle fresh chopped parsley over the chicken for a burst of color and fresh flavor. Serve immediately with crusty bread or mashed potatoes to soak up the creamy garlic sauce.
Notes
- You can substitute chicken breasts for thighs; just adjust cooking time accordingly to ensure they are fully cooked.
- Adding mushrooms during the garlic sauté step brings an earthy flavor and depth to the dish.
- This dish stores well in the refrigerator for up to 3 days; reheat gently to preserve the cream sauce texture.
