Ingredients
For the Beef Stroganoff:
1 Tbsp olive oil
1 lb lean ground beef (90% lean recommended)
1/2 medium onion, diced
1 lb mushrooms, sliced
2 garlic cloves, minced
2 Tbsp all-purpose flour
1 cup beef broth
1 cup heavy whipping cream
1/3 cup sour cream
1 Tbsp Worcestershire sauce
1/2 tsp salt (adjust to taste)
1/2 tsp ground black pepper (adjust to taste).
Instructions
Brown the Ground Beef
Preheat a deep pan or dutch oven over medium-high heat with 1 Tbsp olive oil. Add 1 lb ground beef and break it down into small pieces. Cook for about 5 minutes or until the beef is no longer pink. Add 1/2 medium diced onion and 2 minced garlic cloves, sautéing until the onions are golden and translucent.
Add Mushrooms and Cook
Add 1 lb sliced mushrooms to the pan and cook for another 5 minutes, allowing the mushrooms to soften and release their moisture. Let the moisture evaporate if needed.
Thicken the Sauce
Stir in 2 Tbsp all-purpose flour, making sure to combine everything well and dissolve any lumps. Continue cooking for 1 minute to cook off the raw flour taste.
Simmer with Broth and Cream
Pour in 1 cup beef broth and 1 cup heavy whipping cream, stirring to combine. Add 1 Tbsp Worcestershire sauce, 1/2 tsp salt, and 1/2 tsp black pepper. Bring the mixture to a simmer over medium-low heat and cook for about 5 minutes, allowing the sauce to thicken slightly.
Add Sour Cream and Serve
Remove the pan from heat and stir in 1/3 cup sour cream until the sauce is smooth. Adjust seasoning to taste. Serve over your choice of noodles, rice, or mashed potatoes.
