- 2 carrots, diced
- 2 celery stalks, diced
- 1 potato, chopped
- 1 zucchini, chopped
Liquids & Seasonings
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp thyme
- 1 tsp parsley
- Salt & pepper, to taste
Instructions
- Sauté Aromatics: Heat 1 tbsp olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for about 2 minutes until fragrant and softened but not browned.
- Add Vegetables and Broth: Stir in the diced carrots, celery, chopped potato, and zucchini. Pour in 4 cups of vegetable broth, then add 1 tsp thyme, 1 tsp parsley, and season with salt and pepper to taste.
- Simmer the Soup: Bring the soup to a gentle boil, then reduce the heat to medium-low and let it simmer uncovered for 25 to 30 minutes, or until the vegetables are tender and flavors are well blended.
- Serve and Garnish: Ladle the hot soup into bowls and garnish with additional fresh parsley if desired. Optionally, blend half of the soup for a creamier texture before serving.
