Ingredients

Liquids & Seasonings

  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp thyme
  • 1 tsp parsley
  • Salt & pepper, to taste


Instructions

  1. Sauté Aromatics: Heat 1 tbsp olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for about 2 minutes until fragrant and softened but not browned.
  2. Add Vegetables and Broth: Stir in the diced carrots, celery, chopped potato, and zucchini. Pour in 4 cups of vegetable broth, then add 1 tsp thyme, 1 tsp parsley, and season with salt and pepper to taste.
  3. Simmer the Soup: Bring the soup to a gentle boil, then reduce the heat to medium-low and let it simmer uncovered for 25 to 30 minutes, or until the vegetables are tender and flavors are well blended.
