- 1 onion, diced
- 3 potatoes, diced

Instructions
- Brown the beef and onions: In a large pot or Dutch oven over medium heat, cook the beef mince or shredded beef along with the diced onion until the beef is browned and the onions are translucent. Season with salt and pepper during this step to build flavor.
- Add vegetables and liquids: Stir in the diced potatoes and sliced carrots into the pot. Pour in the 4 cups of beef broth, then add the garlic powder and thyme or Italian seasoning.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer gently for 20 to 25 minutes, or until the potatoes and carrots are tender.
- Serve warm: Once the vegetables are cooked through, taste and adjust seasoning as needed. Serve the soup hot for a comforting meal.
