Ingredients
Brownies:
8 eggs
2 teaspoons salt
2 cups unsalted butter, melted
1 ½ cups cocoa (see note)
4 cups sugar
4 teaspoons vanilla
3 cups all-purpose flour
Frosting:
4 cups powdered sugar
½ cup unsalted butter, softened
½ cup cocoa
¼ to ½ cup milk
Instructions
1. Preheat your oven to 350°F and grease a jelly roll pan (12 x 17 inches).
2. In a large bowl, beat the eggs with a mixer until pale yellow. Add sugar, salt, vanilla, and beat for 1 minute.
3. Add the melted butter and blend until smooth.
4. In another bowl, whisk together the flour and cocoa until well mixed.
5. Add the flour mixture to the egg mixture and stir until fully combined.
6. Spread the brownie batter evenly into the prepared pan and bake for 20-25 minutes or until set in the middle. Let the brownies cool for 15 minutes.
7. For the frosting: In a bowl, blend the powdered sugar, butter, and cocoa. Add enough milk (1/4 to 1/2 cup) to achieve a spreadable consistency. The frosting should be thick and barely spreadable.
8. Spread the frosting over the cooled brownies. Keep spreading as the frosting melts into the brownies, making it smooth and even. Let the brownies cool completely before serving.
Notes
Cocoa: Choose unsweetened cocoa with only cocoa listed as the ingredient.
Half Recipe: If you don’t need a large batch, you can halve the recipe and bake it in a 9×13-inch baking dish.
