Instructions

  1. Combine Ingredients: In a medium saucepan, whisk together lemon juice, lemon zest, sugar, and eggs until smooth, ensuring the mixture is fully blended before cooking.
  2. Cook the Mixture: Place the saucepan over medium-low heat. Cook, whisking constantly, for 8–10 minutes until the mixture thickens and coats the back of a spoon, making sure not to let it boil.
  3. Add Butter: Remove from heat and immediately whisk in butter cubes until fully melted and the curd is smooth and glossy.
  4. Strain Curd: For an extra smooth texture, strain the lemon curd through a fine-mesh sieve into a clean container.
  5. Cool and Store: Transfer the lemon curd to a jar or container. Let cool completely at room temperature before covering and refrigerating.

Notes
