Description

Flaky puff pastry filled with a creamy mixture of sautéed mushrooms, onions, and herbs, these savory pastries are elegant and perfect for appetizers or brunch platters. The combination of tender mushrooms with cream cheese and thyme wrapped in buttery puff pastry creates a deliciously rich and satisfying treat.

Ingredients

Pastry

  • 1 sheet puff pastry

Filling

  • 2 cups mushrooms, chopped
  • 1 onion, finely diced
  • 2 tbsp butter
  • ¼ cup cream cheese
  • 1 tsp thyme
  • Salt & pepper, to taste

Egg Wash

  • 1 egg (for egg wash)

Instructions

  1. Prepare the filling: In a skillet over medium heat, melt the butter and sauté the finely diced onion until translucent. Add the chopped mushrooms and thyme, cooking until the mushrooms release their moisture and become tender. Stir in the cream cheese until melted and well combined. Season with salt and pepper to taste. Remove from heat and allow the filling to cool completely.
  2. Prepare the pastry: Roll out the puff pastry sheet on a lightly floured surface and cut it into 12 equal squares. Place a spoonful of the cooled mushroom filling in the center of each square.
  3. Assemble the pastries: Fold each square over the filling to create a triangle or rectangle shape, pressing the edges together with a fork or fingers to seal tightly and prevent leaking during baking.
  4. Apply egg wash: Beat the egg lightly and brush the tops of the pastries with the egg wash. This will give them a beautiful golden brown and glossy finish.
  5. Bake: Preheat your oven to 375°F (190°C). Place the pastries on a baking sheet lined with parchment paper. Bake for 15–18 minutes, or until the pastries are puffed up and golden brown.
  6. Serve: Remove from the oven and allow to cool slightly before serving. These pastries are best enjoyed warm.

Notes

  • These pastries can be prepared in advance and frozen before baking. Bake straight from the freezer, adding a few extra minutes to the baking time.
  • Add fresh spinach or crispy cooked bacon to the mushroom filling for additional flavor variations.
  • For a dairy-free version, substitute cream cheese with a plant-based alternative.
