Ingredients

Coconut Rice

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt


Instructions

  1. Preheat and prepare sauce: Preheat the oven to 400°F (200°C). In a bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, and vegetable oil until well combined.
  2. Coat chicken and bake: Coat each chicken drumstick thoroughly with the honey soy sauce mixture. Place the coated drumsticks on a lined baking tray, ensuring they are spaced out evenly. Bake in the preheated oven for 40 to 45 minutes, turning the drumsticks halfway through the cooking time to ensure even caramelization and cooking. The chicken should be sticky, glazed, and fully cooked through.
  3. Prepare coconut rice: While the chicken bakes, rinse the jasmine rice under cold water until the water runs clear to remove excess starch. In a saucepan, combine the rinsed rice, coconut milk, water, and salt. Bring the mixture to a boil over medium-high heat.
