Ingredients

4 cups jasmine rice, cooked and cooled

⅓ cup vegetable broth

½ cup pesto

For the Pesto:

2 cups baby spinach leaves

½ cup fresh parsley

¼ cup fresh dill or fresh mint

2 tablespoons olive oil

½ lemon, juiced

½ teaspoon kosher salt


Instructions

Step 1: Make the Pesto

In a food processor, combine the spinach, parsley, dill (or mint), olive oil, lemon juice, and salt.

Process until smooth, scraping the sides as needed. Taste and adjust seasoning if necessary.

Step 2: Cook the Rice

In a skillet, combine the cooked jasmine rice, pesto, and vegetable broth.
