With a slight crisp on the outside and a soft, melt-in-your-mouth interior, these cookies are the ultimate treat for any occasion. Quick to prepare and full of flavor, they’ll satisfy your churro cravings!

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter (room temperature)

1/2 cup granulated sugar

1/4 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

For the Sugar-Cinnamon Coating:

1/4 cup granulated sugar

2 teaspoons ground cinnamon

Instructions

Preheat the Oven:

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Prepare the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, salt, and ground cinnamon. Set aside.

Make the Dough:

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Shape the Cookies:

Use a cookie scoop to portion out dough onto the prepared baking sheets, leaving space between each cookie.

Bake the Cookies:

Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.

Coat in Sugar-Cinnamon:

While the cookies are still warm, toss them in the sugar-cinnamon mixture until fully coated.

Notes

Be sure to allow the cookies to cool slightly before tossing them in the sugar-cinnamon mixture to ensure they coat evenly.

These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
