Description

Bright, tangy lemon brownies featuring a soft and chewy texture topped with a sweet lemon glaze. This citrus-infused dessert bar offers a refreshing twist on traditional brownies, perfect for spring, summer, or any time you crave a zesty treat.

Ingredients

Lemon Brownies

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup all-purpose flour
  • 1/4 tsp salt

Lemon Glaze

  • 3/4 cup powdered sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Mix sugar and butter: In a large bowl, whisk together the granulated sugar and melted unsalted butter until the mixture is smooth and well-combined.
  3. Add eggs and lemon: Incorporate the two large eggs, 2 tablespoons of fresh lemon juice, and 1 tablespoon of lemon zest into the sugar-butter mixture, mixing until fully combined for a bright citrus flavor.
  4. Incorporate dry ingredients: Stir in 1 cup all-purpose flour and 1/4 teaspoon salt gently just until the batter is combined. Be careful not to overmix to maintain a tender texture.
  5. Bake the brownies: Spread the batter evenly into your prepared pan and bake for 22 to 25 minutes, or until the edges are set and the center is just cooked through.
  6. Prepare the lemon glaze: While the brownies cool slightly, whisk together 3/4 cup powdered sugar and 2 tablespoons fresh lemon juice until smooth to create a glossy, tangy glaze.
  7. Glaze and cool: Pour the lemon glaze evenly over the warm brownies, spreading it to the edges. Allow the brownies to cool completely in the pan before slicing into squares.

Notes

  • Do not overbake or the brownies will lose their soft and chewy texture.
  • For an extra burst of lemon flavor, add additional lemon zest to the glaze.
  • Store cooled brownies in an airtight container at room temperature for up to 3 days to maintain freshness.
