Description

This Lemon Butter Garlic Pasta Sauce (Pasta al Limone) is a simple yet flavorful dish that’s perfect for a quick lunch or dinner. The combination of zesty lemon, creamy butter, and aromatic garlic makes this pasta irresistibly delicious. Ready in just 15 minutes, it’s a satisfying meal for busy days.


Ingredients

300 g (10.5 oz) linguine or spaghetti

1 tablespoon olive oil

40 g (2 tablespoons) unsalted butter

6 garlic cloves, finely sliced

½ teaspoon red chilli flakes

Zest and juice of 1 lemon

50 g (½ cup) grated Parmesan (or veggie hard Italian cheese)

A handful of freshly chopped parsley

Salt and freshly ground black pepper to taste


Instructions

Cook the Pasta: Cook the linguine or spaghetti al dente in salted water according to the package instructions. Before draining, reserve 1-2 cups of pasta water.

Make the Sauce: While the pasta is cooking, heat olive oil in a large pan or Dutch oven. Melt the butter over low-medium heat.

Cook the Garlic: Stir in the sliced garlic and red chili flakes. Cook for 1-2 minutes, until the garlic turns golden, but be careful not to burn it.

Combine the Pasta and Sauce: Transfer the cooked pasta to the pan and toss with kitchen tongs to coat it in the butter sauce. Add a splash of reserved pasta water if the sauce seems too thick.

Add Lemon and Cheese: Stir in the lemon zest and juice, followed by the grated Parmesan. Toss well to combine everything.

Season and Serve: Add freshly chopped parsley, season with salt and pepper to taste, and serve immediately. Top with extra grated cheese and lemon zest if desired.

Pasta Variations: Feel free to use other types of pasta like fettuccine or penne, depending on your preference.
