Ingredients
Lemon Syrup
- 1 cup water
- 1/2 cup granulated sugar
- 1/3 cup fresh lemon juice
- 1 tbsp lemon zest
Mascarpone Cream
- 8 oz mascarpone cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon zest
Assembly
- 24 ladyfinger cookies
- Lemon slices or extra zest, for garnish
Instructions
- Prepare Lemon Syrup: In a small saucepan, combine water and sugar. Bring the mixture to a simmer and cook until the sugar has completely dissolved. Remove the pan from heat and stir in fresh lemon juice and lemon zest. Set aside and let it cool completely.
- Whip Cream: In a large bowl, whip the heavy cream until stiff peaks form, ensuring a light and airy texture for the mascarpone filling.
- Mix Mascarpone Cream: In a separate bowl, blend softened mascarpone cheese with powdered sugar, vanilla extract, and lemon zest until smooth and well combined.
- Combine Mixtures: Gently fold the whipped cream into the mascarpone mixture carefully until fully incorporated, creating a creamy, fluffy filling.
- Dip Ladyfingers: Quickly dip each ladyfinger cookie into the cooled lemon syrup, being careful not to soak them to avoid sogginess.
- Layer Dessert: Arrange a layer of dipped ladyfingers evenly in the bottom of an 8×8-inch dish. Spread half of the mascarpone cream over this layer.
- Repeat Layering: Add another layer of lemon-syrup dipped ladyfingers on top, then spread the remaining mascarpone cream over the second layer.
- Chill: Cover the dish and refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set properly.
- Garnish and Serve: Before serving, garnish the tiramisu with fresh lemon slices or extra lemon zest to add a bright citrus finish.
Notes
- Do not oversoak the ladyfingers to prevent the dessert from becoming soggy.
- For best flavor and texture, chill the tiramisu overnight.
- For an extra citrus punch, add a thin layer of lemon curd between the layers.
