Ingredients

Lemon Syrup

  • 1 cup water
  • 1/2 cup granulated sugar

Mascarpone Cream

  • 8 oz mascarpone cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar

Instructions

  1. Prepare Lemon Syrup: In a small saucepan, combine water and sugar. Bring the mixture to a simmer and cook until the sugar has completely dissolved. Remove the pan from heat and stir in fresh lemon juice and lemon zest. Set aside and let it cool completely.
  2. Whip Cream: In a large bowl, whip the heavy cream until stiff peaks form, ensuring a light and airy texture for the mascarpone filling.
  3. Mix Mascarpone Cream: In a separate bowl, blend softened mascarpone cheese with powdered sugar, vanilla extract, and lemon zest until smooth and well combined.
  4. Combine Mixtures: Gently fold the whipped cream into the mascarpone mixture carefully until fully incorporated, creating a creamy, fluffy filling.
  5. Dip Ladyfingers: Quickly dip each ladyfinger cookie into the cooled lemon syrup, being careful not to soak them to avoid sogginess.
  6. Layer Dessert: Arrange a layer of dipped ladyfingers evenly in the bottom of an 8×8-inch dish. Spread half of the mascarpone cream over this layer.
  7. Repeat Layering: Add another layer of lemon-syrup dipped ladyfingers on top, then spread the remaining mascarpone cream over the second layer.
