Description

These Low Calorie Crepe Style Pancakes are a light and healthy alternative to traditional pancakes. Made with just a few simple ingredients, they’re perfect for breakfast or a light snack. Serve with fresh raspberries and a squeeze of lemon juice for a refreshing, low-calorie treat.

Ingredients

20g (0.7oz) all-purpose (plain) flour

2 large eggs

½ cup (120ml) fat-free vanilla yogurt

Pinch of salt

Low-calorie spray oil (coconut oil recommended)

Instructions

Prepare the Batter: Add the flour, eggs, yogurt, and salt to a bowl. Whisk together until smooth and fully combined.

Heat the Pan: Heat a non-stick crepe pan or frying pan over medium heat. Once hot, lightly spray with low-calorie spray oil.

Cook the Crepes: Pour a small amount of the batter onto the pan. Swirl the pan around to spread the batter into a thin crepe. Lower the heat slightly and allow it to cook until the edges start to lift and the bottom is lightly browned.

Flip and Cook: Carefully flip the crepe using a spatula and cook for another 1-2 minutes until golden brown on both sides.

Repeat and Serve: Repeat with the remaining batter. Serve the crepes with your favorite toppings, such as fresh raspberries, a squeeze of lemon juice, or a sprinkle of zest.

Notes

Topping Ideas: These pancakes are delicious with fresh fruit, a drizzle of honey, or a sprinkle of cinnamon for added flavor.

Dairy-Free Option: Use dairy-free yogurt if you want to make this recipe dairy-free.

Vegetarian-Friendly: This recipe is suitable for vegetarians.
