Description
A hearty, low-carb casserole layered with seasoned ground beef, tender zucchini, and melted cheese, perfect for a comforting and nutritious meal.
Ingredients
Main Ingredients
- 1½ lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 medium zucchini, sliced
- 1 can (14 oz) diced tomatoes, drained
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare it for baking the casserole.
- Cook Ground Beef and Onion: In a skillet, brown the ground beef along with the diced onion over medium heat until the meat is fully cooked and the onion is softened. Drain any excess fat to keep the dish leaner.
- Add Seasonings and Tomatoes: Stir in the minced garlic, Italian seasoning, salt, and black pepper. Then add the drained diced tomatoes and cook for an additional 3 minutes to blend the flavors.
- Layer Ingredients: Grease a baking dish and layer slices of zucchini alternated with the ground beef mixture, creating a flavorful stack.
- Add Cheese: Top the layered casserole with shredded mozzarella cheese and grated Parmesan cheese evenly.
- Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes until the casserole is bubbly and the cheese is golden brown on top.
Notes
- Salt zucchini lightly and pat dry to prevent excess moisture that can make the casserole watery.
- Add red pepper flakes to the beef mixture if you prefer a bit of heat.
