Description

Layers of zucchini, savory ground beef, tomato sauce, and melted cheese baked into a hearty low-carb casserole.


Ingredients

Ground Beef Mixture:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups tomato sauce
  • 1 tsp Italian seasoning
  • Salt & pepper

Additional Ingredients:

  • 3 medium zucchini, sliced ¼ inch thick
  • 1 cup mozzarella cheese
  • ½ cup Parmesan


Instructions

  1. Brown beef with onion & garlic: In a skillet, cook the ground beef with the chopped onion and minced garlic until browned; drain any excess fat.
  2. Stir in tomato sauce & seasoning: Add the tomato sauce and Italian seasoning to the beef mixture, season with salt and pepper, and simmer for a few minutes.
  3. Layer ingredients: In a baking dish, layer half of the sliced zucchini, followed by half of the meat sauce, and a portion of the cheeses. Repeat this layering process.
  4. Bake: Preheat the oven to 375 °F and bake the casserole for 25–30 minutes or until bubbly and the zucchini is tender.
