Ingredients
4 cups cherry tomatoes, halved
2 large cucumbers, sliced
1/2 red onion, thinly sliced
1/4 cup olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Instructions
In a large bowl, combine cherry tomatoes, cucumbers, and red onion.
In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
Pour the vinaigrette over the vegetables and toss to coat evenly.
Chill for 30 minutes to allow the flavors to blend.
Garnish with chopped fresh parsley before serving.
