Ingredients
Chicken and Vegetables
- 8 chicken thighs or drumsticks
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can chickpeas, drained
Spices and Seasonings
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp ground cinnamon
- Salt and pepper, to taste

- 2 tbsp olive oil
- 1 cup chicken stock
- Fresh parsley, chopped (optional)
Instructions
- Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the chicken and vegetables.
- Prepare the baking tray: In a large roasting tray, combine the chicken thighs or drumsticks with sliced onion, minced garlic, and drained chickpeas.
- Add spices and seasoning: Sprinkle the ground cumin, coriander, paprika, cinnamon, salt, and pepper evenly over the ingredients in the tray to infuse the dish with Middle Eastern flavors.
- Coat with olive oil: Drizzle the olive oil over the tray’s contents, then toss everything gently to ensure the chicken and vegetables are evenly coated with spices and oil.
- Add chicken stock: Pour one cup of chicken stock into the tray to provide moisture for braising during cooking.
- Cover and bake: Seal the tray tightly with foil and bake in the preheated oven for 35 minutes, allowing the chicken to braise and become tender.
- Uncover and continue baking: Remove the foil and bake uncovered for an additional 20 to 25 minutes until the chicken skin is golden brown and the meat is cooked through.
- Garnish and serve: Sprinkle freshly chopped parsley over the dish for brightness and serve with your choice of couscous, rice, or flatbread.
