Ingredients
For the cookies:
1 cup almond flour
1/4 cup cocoa powder
1/4 cup maple syrup
1/4 cup almond butter
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
For the mint chip ice cream:
3 ripe bananas, frozen
1/4 cup coconut cream
1/4 teaspoon peppermint extract
1/4 cup mini dairy-free chocolate chips
Optional: a few spinach leaves (for natural green color)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, mix all cookie ingredients until a soft dough forms.
Scoop out tablespoon-sized amounts, roll into balls, flatten slightly, and place on the baking sheet.
Bake for 10-12 minutes. Cool completely.
For the ice cream, blend frozen bananas, coconut cream, peppermint extract, and spinach (if using) until smooth.
Fold in chocolate chips.
Scoop ice cream onto one cookie, top with another to form a sandwich.
Freeze sandwiches until firm, about 1 hour.
