Ingredients

Beef and Oil

  • lb beef chuck, cubed
  • 2 tbsp olive oil

Vegetables

  • 1 onion, sliced
  • 3 cloves garlic, minced

Spices

  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • ½ tsp cinnamon
  • Salt to taste

Liquids

  • 1 can (14 oz) crushed tomatoes
  • 1½ cups beef broth


Instructions

  1. Brown the beef: Heat the olive oil in a heavy pot over medium-high heat. Add the cubed beef chuck and brown on all sides to develop a rich color and flavor. Once browned, remove the beef from the pot and set aside.
  2. Sauté onion and garlic: In the same pot, add the sliced onion and minced garlic. Cook over medium heat until the onion softens and becomes translucent, about 5 minutes, releasing their natural sweetness.
  3. Add spices: Stir in ground cumin, paprika, ground coriander, and cinnamon. Cook while stirring for 1-2 minutes until the spices become fragrant and well combined with the onions and garlic.
  4. Combine ingredients: Return the browned beef to the pot. Pour in the crushed tomatoes and beef broth. Stir everything together ensuring the beef is submerged in the liquid and spices.
  5. Simmer the tagine: Cover the pot with a lid and reduce the heat to low. Let the mixture simmer gently for 2 to 2½ hours, or until the beef is tender and the flavors are well melded. Stir occasionally and add a little water if needed to keep from drying out.
  6. Adjust seasoning and serve: Taste the tagine and add salt as needed. Serve hot alongside couscous or flatbread for a traditional Moroccan meal experience.
