Description
A hearty and flavorful African-inspired okra soup made with fresh okra, tomatoes, onions, garlic, and aromatic spices. This comforting soup features a slightly thickened texture and is both nutritious and satisfying, perfect for a warming meal served with rice or bread.
Ingredients
Vegetables
- 2 cups fresh okra, sliced
- 1 small onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
Seasonings & Spices
- 1/2 teaspoon paprika
- 1/2 teaspoon thyme
- Salt and black pepper to taste
Other
- 2 tablespoons oil (vegetable or olive oil)
- 4 cups vegetable or chicken broth
Instructions
- Heat the oil: In a pot over medium heat, warm 2 tablespoons of oil until shimmering to prepare for sautéing the vegetables.
- Sauté onion and garlic: Add the chopped onion and minced garlic to the pot. Cook, stirring occasionally, until the onion becomes translucent and the garlic is fragrant, about 3-4 minutes.
- Cook tomatoes: Stir in the chopped tomatoes and continue cooking for 5 minutes, allowing the tomatoes to soften and blend their flavors into the mixture.
- Add okra and broth: Add the sliced okra to the pot along with 4 cups of vegetable or chicken broth. Sprinkle in the paprika and thyme, stirring to combine all ingredients evenly.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 20 minutes, allowing the okra to tenderize and the flavors to meld together.
- Season to taste: After simmering, season the soup with salt and black pepper accordingly. Avoid over-stirring to maintain a pleasant texture.
- Serve warm: Ladle the soup into bowls and serve warm. Enjoy it on its own or accompanied by steamed rice or crusty bread for a satisfying meal.
Notes
- Avoid over-stirring the soup to minimize okra sliminess and maintain a pleasant texture.
- For added protein and variation, include meat such as chicken or seafood like shrimp.
- Serve the okra soup with rice or bread to complete the meal.
