  • lb beef sirloin or stew meat, cubed

  • 3 cups beef broth
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper to taste


Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the cubed beef and cook until it is browned and golden on all sides, about 5-7 minutes. This step seals in the juices and develops deep flavor.
  2. Sauté Aromatics: Add the diced onion and minced garlic to the pot with the beef. Cook, stirring occasionally, until the onion softens and becomes translucent, about 3-4 minutes, releasing their fragrant aroma.
  3. Add Rice and Spices: Stir in the basmati rice along with paprika and cumin. Mix well to evenly coat the rice and meat with the spices, allowing the rice to lightly toast for about 1-2 minutes.
  4. Pour in Broth and Simmer: Pour the beef broth into the pot and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer gently for 20 minutes, or until the rice is tender and has absorbed the broth.
  5. Rest and Fluff: Remove the pot from heat and let it rest, still covered, for 5 minutes. This resting period allows the rice to finish steaming. Then, fluff the pilaf gently with a fork before serving to separate the grains and blend the flavors.
