Description

A moist and flavorful quick bread combining the tartness of fresh cranberries, the bright zest of orange, and the richness of chocolate or white chocolate chips. This festive and bright loaf makes a perfect breakfast or holiday treat.

Ingredients

Dry Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup sugar
  • 1 tablespoon orange zest
  • 1 cup fresh or dried cranberries
  • ½ cup chocolate chips or white chocolate chips

Wet Ingredients

  • ¾ cup milk
  • 1 egg
  • ¼ cup melted butter

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan thoroughly to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, salt, sugar, orange zest, cranberries, and chocolate chips. Stir these together until evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, and melted butter until smooth and well blended.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together just until the mixture is combined; avoid overmixing to keep the bread tender.
  5. Pour and Bake: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Remove the bread from the oven and allow it to cool completely in the pan before slicing. This helps the bread set and slice neatly.

Notes

  • Add chopped nuts such as walnuts or pecans to the batter for extra texture and flavor.
  • For a glaze, mix powdered sugar with fresh orange juice and drizzle over the cooled bread.
