Ingredients

For the Muffins:

1 ¼ cup flour

1 ½ tsp baking powder

¼ tsp salt

⅔ cup white sugar

1 cup chopped fresh or canned peaches

½ cup buttermilk

1 large egg, beaten

¼ cup unsalted butter, melted

1 tsp pure vanilla extract

For the Cobbler Topping:

¼ cup flour

4 tbsp white or brown sugar

½ tsp baking powder

¼ tsp cinnamon

4 tbsp unsalted butter


Instructions

Step 1: Preheat and Prepare

Preheat your oven to 350°F (180°C).

Line a 12-cup muffin pan with muffin liners or use a silicone muffin pan.

Step 2: Prepare the Muffin Batter

In a large bowl, whisk together the flour, baking powder, salt, and white sugar.

Add the chopped peaches and stir to coat them evenly in the flour mixture.

Add the buttermilk, beaten egg, melted butter, and vanilla extract. Stir gently until combined. Be careful not to overmix.

Step 3: Scoop the Batter

Using a cookie scoop, evenly distribute the muffin batter into the muffin cups.

Step 4: Make the Cobbler Topping

In a small bowl, combine the flour, sugar, baking powder, and cinnamon. Stir to combine.

Using a pastry blender or your fingers, add in the cold butter and blend until the mixture resembles small pea-sized crumbs.

Step 5: Top and Bake

Spoon the cobbler topping evenly over each muffin.

Add a few small pieces of peach on top of the muffins if desired.
