Ingredients

Chicken

  • 4 boneless skinless chicken breasts (or thighs)

Fruits & Vegetables

  • 1 1/2 cups fresh pineapple chunks (or canned, drained)
  • 1 bell pepper, sliced
  • 1 small red onion, sliced

Seasoning & Sauces

  • 1 cup barbecue sauce
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder


Instructions

  1. Preheat and Prepare Foil: Preheat the oven to 400°F (200°C) or preheat the grill to medium-high heat. Tear 4 large sheets of heavy-duty aluminum foil, enough to create individual packets for each chicken piece.
  2. Assemble Chicken and Vegetables: Place one chicken breast in the center of each foil sheet. Evenly top each chicken breast with pineapple chunks, sliced bell pepper, and sliced red onion.
  3. Season and Add Sauce: Drizzle 2 tablespoons of olive oil over the chicken and vegetable mixture. Then, sprinkle salt, black pepper, and garlic powder evenly across. Spoon barbecue sauce generously over each chicken breast and vegetable pile to ensure full flavor coverage.
  4. Seal Foil Packs: Fold the sides of the foil tightly around the ingredients, creating sealed packets. This helps to lock in moisture and flavor during cooking.
  5. Cook the Packs: Place foil packs on a baking sheet if using an oven or directly on the grill grates. Bake for 30–35 minutes or grill for 20–25 minutes until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
  6. Optional Broiling for Caramelization: For extra caramelized edges, carefully open the foil packets after cooking and broil under high heat for 2–3 minutes.
  7. Serve: Carefully open the foil packs to avoid steam. Serve hot, optionally over rice or alongside a fresh salad for a complete meal.
