Ingredients
For the Graham Cracker Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tbsp unsalted butter (melted)
For the Cheesecake Filling:
4 (8 oz) packages cream cheese (softened)
1 cup granulated sugar
1 cup sour cream
1 tsp vanilla extract
3 large eggs
For the Midnight Blueberry Swirl:
1 cup fresh or frozen blueberries
2 tbsp granulated sugar
1 tbsp lemon juice
1 tsp cornstarch mixed with 2 tbsp water
Optional Decorations:
Edible silver dust or sprinkles (for a starry night effect)
Instructions
Prepare the Crust:
Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until combined.
Press the mixture firmly into the bottom of the pan to create an even layer.
Bake for 8-10 minutes, then let the crust cool while preparing the filling.
Make the Cheesecake Batter:
In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Add the sour cream and vanilla extract, mixing until fully incorporated.
Add the eggs one at a time, mixing gently after each addition. Avoid overmixing to prevent cracks in the cheesecake.
Create the Midnight Blueberry Swirl:
In a saucepan over medium heat, combine the blueberries, granulated sugar, and lemon juice.
Stir occasionally until the blueberries break down and release their juices.
Mix the cornstarch with water to create a slurry, then stir it into the blueberry mixture.
Simmer for 2-3 minutes until the mixture thickens. Remove from heat and let it cool.
Assemble & Bake the Cheesecake:
Pour the cheesecake batter over the cooled graham cracker crust and smooth the top with a spatula.
Spoon dollops of the blueberry swirl over the cheesecake batter. Use a skewer or knife to create swirls in the batter, creating the midnight-inspired effect.
Bake the cheesecake for 50-60 minutes, or until the center is slightly jiggly but set.
Turn off the oven and let the cheesecake cool inside for 1 hour before transferring it to the fridge. Chill for at least 4 hours or overnight.
Decorate & Serve:
Once chilled, dust the cheesecake with edible silver glitter or sprinkles to create a starry, enchanted look.
Slice and serve your Ravenclaw Midnight Blueberry Cheesecake at Hogwarts feasts, book nights, or magical dessert tables!
