- Preheat the oven: Set your oven to 200°C (400°F) and allow it to reach the temperature while you prepare the taquitos.
- Mix the filling: In a medium bowl, combine the chopped cooked corned beef, shredded Swiss cheese, drained sauerkraut, and Thousand Island dressing. Stir until all ingredients are evenly incorporated.
- Fill and roll tortillas: Spoon the corned beef mixture onto each tortilla, spreading it evenly. Roll each tortilla tightly to enclose the filling completely, ensuring the seam is on the bottom to hold the shape.
