Description

Rhubarb Mint Mojito Mocktail is a refreshing and vibrant alcohol-free beverage made with tart rhubarb syrup, fresh mint leaves, zesty lime juice, and sparkling water. This light pink mocktail is perfectly balanced in sweetness and acidity, making it an ideal choice for brunches, parties, or warm-weather relaxation.

Ingredients

Rhubarb Syrup

  • 1 cup chopped rhubarb
  • ½ cup sugar
  • ½ cup water

Mocktail

  • 2 tablespoons rhubarb syrup
  • 1 tablespoon fresh lime juice
  • 68 fresh mint leaves
  • Ice, as needed
  • ½¾ cup sparkling water

Optional Garnish

  • Mint sprigs
  • Lime slices
  • Rhubarb ribbon

Instructions

  1. Make the Rhubarb Syrup: In a medium saucepan, combine the chopped rhubarb, sugar, and water. Bring the mixture to a gentle simmer over medium heat. Cook for 10 to 15 minutes, stirring occasionally, until the rhubarb has broken down and the syrup has thickened. Remove from heat, strain out the solids through a fine mesh sieve, and allow the syrup to cool completely.
  2. Assemble the Mocktail: In a serving glass, add 6 to 8 fresh mint leaves and the fresh lime juice. Gently muddle the mint to release its aromatic oils without tearing the leaves excessively. Fill the glass with ice cubes to chill the drink. Pour in 2 tablespoons of the prepared rhubarb syrup. Top off with ½ to ¾ cup of sparkling water depending on your desired fizz and dilution. Stir gently to combine all ingredients without bruising the mint further.
  3. Garnish and Serve: Optionally, garnish the mocktail with fresh mint sprigs, a slice of lime, and a rhubarb ribbon for an elegant presentation. Serve immediately to enjoy the refreshing, crisp flavors at their best.

Notes

  • Adjust the amount of rhubarb syrup in the mocktail according to your preferred sweetness level.
  • Store leftover rhubarb syrup in an airtight container in the refrigerator for up to 1 week.
  • For added fizz and a slightly sweeter variation, substitute sparkling water with lemon-lime soda.
  • Frozen rhubarb can be used as a convenient alternative to fresh rhubarb when making the syrup.
