Description

This Roasted Tomato and Garlic Ricotta Pasta is a creamy, comforting dish featuring the natural sweetness of roasted tomatoes, savory garlic, and rich ricotta cheese. Ingredients

2 cups cherry tomatoes

6 cloves garlic, unpeeled

3 tbsp olive oil

Salt and pepper to taste

12 oz pasta (spaghetti or penne)

1 cup ricotta cheese

1/2 cup freshly grated Parmesan cheese

1/4 cup fresh basil, chopped

Red pepper flakes (optional, for heat)


Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Spread cherry tomatoes and unpeeled garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 20-25 minutes until the tomatoes soften and slightly char, and the garlic becomes fragrant.

  4. While the tomatoes and garlic roast, cook the pasta in a large pot of salted water according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.

  5. Once roasted, peel the garlic and mash it with a fork.

  6. In a large bowl, combine ricotta, roasted tomatoes, mashed garlic, Parmesan, and reserved pasta water. Stir until the sauce is smooth.

  7. Add the cooked pasta to the sauce, tossing to coat. Adjust with more pasta water if needed.

  8. Top with fresh basil and red pepper flakes (optional). Serve immediately.

Notes

For a vegan version, swap ricotta and Parmesan for plant-based alternatives.
