Description
This Rosemary Apple Cider Chicken recipe features tender chicken breasts glazed with a sweet and aromatic sauce made from apple cider, Dijon mustard, honey, and fresh rosemary, perfect for a cozy, fall-inspired dinner.
Ingredients
Chicken:
- 1 tbsp olive oil
- 4 chicken breasts
- Salt & pepper, to taste
Glaze:
- 1 cup apple cider
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 tsp fresh rosemary, finely chopped
Instructions
- Season and Sear Chicken: Pat the chicken breasts dry and season them generously with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 3-4 minutes per side. Once golden, remove the chicken from the skillet and set aside.
- Prepare the Glaze: In the same skillet, add the apple cider, Dijon mustard, honey, and chopped fresh rosemary. Stir well to combine. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the flavors to meld and the sauce to reduce slightly.
- Cook Chicken in Glaze: Return the seared chicken breasts to the skillet, turning them to coat in the glaze. Reduce the heat to medium-low and continue to cook, basting occasionally, until the chicken is cooked through and the glaze is thickened and shiny, about 10-15 minutes more. Ensure the internal temperature reaches 165°F (74°C) for safety.
Notes
- Pair this dish with mashed sweet potatoes or roasted vegetables for a comforting fall meal.
- Fresh rosemary provides the best flavor, but dried rosemary can be used in a pinch—use about 1/3 teaspoon if dried.
- Make sure to not overcrowd the skillet when searing the chicken to achieve an even golden crust.
