These Shrimp and Chive Dumplings are the perfect beginner-friendly dim sum dish you can easily make at home. Filled with juicy shrimp, fresh chives, and savory seasonings, these dumplings are pan-fried to golden perfection and paired with a tangy soy-vinegar dipping sauce. A must-try for any dumpling lover!
Ingredients
Dumplings:
12 oz shrimp (peeled and deveined, medium to large size)
1 oz chives, cut into very short pieces
1 teaspoon egg white
½ teaspoon tapioca starch (or 菱粉)
½ teaspoon chicken bouillon powder
¼ teaspoon salt
¼ teaspoon fish sauce
¼ teaspoon sesame oil
3 dashes white pepper powder
½ teaspoon sugar
1 teaspoon oil
Wonton skin (for wrapping)
Cooking oil (for pan-frying)
Soy-Vinegar Dipping Sauce:
1 ½ tablespoons soy sauce
1 ½ tablespoons Chinese black vinegar
Instructions
Prepare the Filling:
Clean and rinse the shrimp with cold water. Pat them dry with paper towels. Cut the shrimp into small pieces (about 3-4 pieces per shrimp). Combine the shrimp, chives, and the rest of the ingredients in a bowl. Mix well and marinate in the refrigerator for 30 minutes.
Assemble the Dumplings:
Lay a wonton skin on a flat surface. Dab your index finger in water and trace along the four outer edges of the wonton skin. Place a teaspoon of the shrimp filling in the center. Fold the skin towards the middle, and dab water onto the edges to seal tightly, forming a rounded dumpling. Repeat with the remaining filling and wrappers.
Cook the Dumplings:
Heat a pan over medium-low heat and add a small amount of oil. Once hot, transfer the dumplings into the pan, cover with a lid, and pan-fry on one side until golden brown. Flip the dumplings over and fry the other side until crispy. Add more oil as needed.
Prepare the Dipping Sauce:
While the dumplings are cooking, mix soy sauce and Chinese black vinegar in a small bowl to create the dipping sauce. Set aside.
Serve:
Serve the dumplings with the soy-vinegar dipping sauce on the side. Enjoy!
