Ingredients
Meat and Protein
- 1 lb chicken thighs, chopped
- 1/2 lb smoked sausage, sliced
Vegetables and Aromatics
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup okra, sliced
Liquids and Canned Goods
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
Thickening and Seasoning
- 2 tablespoons flour
- 2 tablespoons oil
- 1 teaspoon Cajun seasoning
- Salt and black pepper to taste
Instructions
- Make the Roux: In a pan, heat oil over medium heat and stir in the flour to make a roux; cook while stirring constantly until it turns lightly browned, which will add a rich depth of flavor to the gumbo.
- Transfer to Slow Cooker: Carefully transfer the prepared roux to the slow cooker pot, spreading it evenly as the base for the gumbo.
- Add Ingredients: Add the chopped chicken, sliced smoked sausage, chopped onion, chopped bell pepper, minced garlic, chicken broth, diced tomatoes, sliced okra, and Cajun seasoning into the slow cooker with the roux. Stir all ingredients thoroughly to combine.
- Cook: Cover the slow cooker and cook the gumbo on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, allowing the flavors to develop and the meats to become tender.
- Season and Serve: Before serving, season the gumbo with salt and black pepper according to your taste preferences. Serve the gumbo hot, optionally over cooked rice to make a complete meal.
