Ingredients
- 1.5 pounds boneless, skinless chicken thighs or breasts
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 3 medium potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 4 cups chicken broth
- 1 tablespoon tomato paste
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 2 tablespoons cornstarch + 2 tablespoons water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Prep Ingredients: Dice all vegetables and trim any excess fat from the chicken.
- Add to Slow Cooker: Place chicken, carrots, celery, potatoes, onion, garlic, thyme, rosemary, bay leaf, tomato paste, and chicken broth into the slow cooker. Stir to combine.
- Cook: Cover and cook on low for 6–8 hours or on high for 3–4 hours, until chicken is cooked through and vegetables are tender.
- Shred Chicken: Remove chicken, shred with two forks, and return it to the slow cooker. Stir well.
