Curry Sauce
- 3 tbsp massaman curry paste
- 1 can (400ml) coconut milk
- 1/2 cup chicken stock
- 2 tbsp peanut butter
- 1 tbsp fish sauce
- 1 tbsp brown sugar
Instructions
- Prepare the Base: Place the sliced onion and halved baby potatoes in the bottom of the slow cooker, creating a flavorful foundation for the curry.
- Add the Chicken: Arrange the chicken drumsticks evenly on top of the vegetables to ensure even cooking.
- Make the Sauce: In a bowl, whisk together the massaman curry paste, coconut milk, chicken stock, peanut butter, fish sauce, and brown sugar until smooth and well combined.
- Combine and Cook: Pour the prepared curry sauce over the chicken and vegetables in the slow cooker, coating everything thoroughly.
- Slow Cook: Cover and cook on low heat for 6–7 hours or on high for 3–4 hours, until the chicken is tender and fully cooked through.
- Serve: Once cooked, serve the massaman chicken drumsticks hot with steamed rice to soak up the delicious sauce.
Notes
- For added texture and flavor, garnish with crushed peanuts or fresh cilantro before serving.
