Description
Comforting and irresistible, this warm Snickerdoodle Cobbler combines soft cinnamon-sugar cake with a gooey, buttery bottom layer—like grandma’s favorite cookie baked in cobbler form.
Ingredients
For the cobbler batter:
1 cup all-purpose flour
½ cup granulated sugar
1 ½ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
¼ cup unsalted butter, melted & slightly cooled
½ cup milk (dairy or plant-based)
1 tsp vanilla extract
For the cinnamon-sugar topping:
2 Tbsp unsalted butter, melted
2 Tbsp granulated sugar
1 tsp ground cinnamon
Instructions
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
Stir in melted butter, milk, and vanilla extract until smooth. Pour batter into the prepared dish.
In a small bowl, combine melted butter, sugar, and cinnamon. Drizzle evenly over the batter—don’t stir.
Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Remove from oven—edges will be bubbly and gooey. Let cool slightly before serving warm.
