Description
Sopa de fideo is a classic Mexican comfort soup made with toasted noodles simmered in a savory tomato broth. Simple, cozy, and budget-friendly, it’s perfect as a light meal or side dish that combines the warm flavors of tomato, cumin, and toasted vermicelli noodles.
Ingredients
Main Ingredients
- 2 tablespoons vegetable oil
- 8 oz fideo noodles (or broken vermicelli)
- ½ small onion, diced
- 2 cloves garlic, minced
- 2 cups tomato sauce (or blended tomatoes)
- 4 cups chicken broth (or vegetable broth)
- ½ teaspoon ground cumin
- ½ teaspoon chili powder (optional)
- Salt, to taste
- Black pepper, to taste
Optional Toppings
- Fresh cilantro
- Queso fresco
- Avocado
- Lime wedges
Instructions
- Heat Oil and Toast Noodles: Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 8 oz of fideo noodles and toast them while stirring constantly until they turn golden brown, which enhances their flavor.
- Sauté Onion: Add ½ diced small onion to the pot and cook for 2–3 minutes until the onion softens and becomes translucent.
- Add Garlic: Stir in 2 minced garlic cloves and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Add Tomato Sauce and Broth: Pour in 2 cups of tomato sauce (or blended tomatoes) and 4 cups of chicken broth (or vegetable broth). Stir the mixture well to combine all ingredients evenly.
- Season the Soup: Add ½ teaspoon ground cumin, ½ teaspoon chili powder if using, and salt and black pepper to taste. Stir to distribute the spices.
- Simmer: Bring the soup to a gentle boil, then reduce heat to low. Let it simmer uncovered for 10–12 minutes, or until the noodles are tender and have absorbed some of the broth.
- Adjust Seasonings: Taste the soup and adjust salt and pepper as needed to suit your preference.
- Serve: Serve the soup warm topped with optional fresh cilantro, crumbled queso fresco, sliced avocado, and lime wedges for added flavor and texture.
Notes
- Stir frequently while toasting the noodles to prevent burning and ensure even golden color.
- For a heartier soup, add shredded cooked chicken during the simmer step.
- The soup thickens as it cools; add extra broth or water when reheating to adjust consistency.
- This soup is traditionally served as a starter or a light dinner.
