Instructions

  1. Heat Oil and Toast Noodles: Heat 2 tablespoons of vegetable oil in a large pot over medium heat. Add 8 oz of fideo noodles and toast them while stirring constantly until they turn golden brown, which enhances their flavor.
  2. Sauté Onion: Add ½ diced small onion to the pot and cook for 2–3 minutes until the onion softens and becomes translucent.
  3. Add Garlic: Stir in 2 minced garlic cloves and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add Tomato Sauce and Broth: Pour in 2 cups of tomato sauce (or blended tomatoes) and 4 cups of chicken broth (or vegetable broth). Stir the mixture well to combine all ingredients evenly.
  5. Season the Soup: Add ½ teaspoon ground cumin, ½ teaspoon chili powder if using, and salt and black pepper to taste. Stir to distribute the spices.
  6. Simmer: Bring the soup to a gentle boil, then reduce heat to low. Let it simmer uncovered for 10–12 minutes, or until the noodles are tender and have absorbed some of the broth.
  7. Adjust Seasonings: Taste the soup and adjust salt and pepper as needed to suit your preference.
