Description

This Sour Cream Noodle Bake is a deliciously creamy and comforting casserole featuring layers of tender egg noodles mixed with tangy sour cream and cottage cheese, rich tomato beef sauce, and melted cheddar or mozzarella cheese. Perfect for an easy weeknight dinner, this baked pasta dish offers a satisfying blend of flavors and textures that the whole family will love.

Ingredients

For the Noodle Mixture

  • 12 oz egg noodles, cooked according to package instructions
  • 1 cup sour cream
  • 1 cup cottage cheese (or substitute ricotta cheese)

For the Beef Sauce

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (15 oz) tomato sauce

Topping

  • 1 cup shredded cheddar or mozzarella cheese

Instructions

  1. Preheat the Oven. Set your oven to 350°F (175°C) to prepare it for baking the noodle casserole later.
  2. Brown the Beef and Onion. In a large skillet over medium heat, cook the ground beef and diced onion together until the beef is fully browned and the onions are softened. Drain excess fat if needed.
  3. Add Tomato Sauce. Stir the 15 oz can of tomato sauce into the browned beef and onions mixture to create a flavorful sauce. Simmer briefly to combine the flavors, about 2-3 minutes.
  4. Mix Noodles with Dairy. In a large bowl, combine the cooked egg noodles with the sour cream and cottage cheese, stirring gently until well blended.
  5. Layer the Bake. In a greased baking dish, spread half of the noodle mixture evenly on the bottom. Spoon half of the beef and tomato sauce mixture over the noodles. Sprinkle half of the shredded cheese on top. Repeat the layers with the remaining noodles, beef sauce, and cheese to create two complete layers.
  6. Bake Until Bubbly. Place the assembled casserole in the preheated oven and bake for 25 to 30 minutes, until the cheese is melted and the dish is hot and bubbly throughout.
  7. Cool and Serve. Allow the casserole to rest for a few minutes after baking before serving. Add optional garnishes like fresh parsley for color and extra flavor.

Notes

  • Add freshly chopped parsley on top before serving for a bright, fresh look and flavor.
  • Substitute ricotta cheese for cottage cheese if you prefer a smoother, creamier texture.
  • This casserole can be made ahead and stored in the refrigerator before baking; increase baking time slightly if baking from cold.
  • Use mozzarella cheese for a milder, creamier melt or cheddar for a sharper flavor contrast.
