Instructions

  3. Add garlic and bell pepper: Stir in minced garlic and diced red bell pepper; cook for 1–2 minutes until fragrant and tender.
  4. Add beans and liquids: Add the drained and rinsed black beans, vegetable broth, and diced tomatoes to the pot.
  5. Season the soup: Stir in ground cumin, chili powder, smoked paprika, and cayenne pepper to infuse the soup with warm, spicy flavors.
  6. Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 20 minutes to allow flavors to meld together.
  7. Blend partially: Use an immersion blender to partially blend the soup, leaving some beans whole for texture and heartiness.
  8. Finish and season: Stir in fresh lime juice and adjust seasoning with salt and black pepper to taste.
