Instructions
- Heat the oil: Heat olive oil in a large pot over medium heat.
- Sauté onions: Add diced onion and sauté for 4–5 minutes until softened and translucent.
- Add garlic and bell pepper: Stir in minced garlic and diced red bell pepper; cook for 1–2 minutes until fragrant and tender.
- Add beans and liquids: Add the drained and rinsed black beans, vegetable broth, and diced tomatoes to the pot.
- Season the soup: Stir in ground cumin, chili powder, smoked paprika, and cayenne pepper to infuse the soup with warm, spicy flavors.
- Simmer: Bring the soup to a boil, then reduce the heat to low and let it simmer gently for 20 minutes to allow flavors to meld together.
- Blend partially: Use an immersion blender to partially blend the soup, leaving some beans whole for texture and heartiness.
- Finish and season: Stir in fresh lime juice and adjust seasoning with salt and black pepper to taste.
- Serve: Ladle the hot soup into bowls and garnish with fresh cilantro before serving.
