  • 6 corn tortillas

  • 1 cup refried beans
  • 1 cup shredded cheddar or Monterey Jack cheese


Instructions

  1. Preheat the Oven: Preheat your oven to 375 °F (190 °C) to prepare for baking the enchilada casserole.
  2. Cook the Beef: In a skillet over medium heat, brown the ground beef. Add the cumin and chili powder, stirring well to evenly coat the meat and develop a rich, seasoned flavor. Cook until the beef is fully browned and no pink remains. Drain excess fat if necessary.
  3. Assemble the Layers: In a baking dish, start with a layer of enchilada sauce spread on the bottom. Layer 2–3 corn tortillas over the sauce. Spread half of the cooked beef evenly over the tortillas, followed by half of the refried beans. Repeat with another layer of tortillas, remaining beef, and beans. Pour the remaining enchilada sauce evenly on top and finish by sprinkling the shredded cheese over everything.
  4. Bake: Place the assembled dish in the preheated oven and bake for 20 to 25 minutes until the cheese is melted, bubbly, and slightly golden.
  5. Serve: Remove from the oven and let the casserole sit for a few minutes before serving. Garnish with fresh cilantro and a dollop of sour cream if desired.
