A soft, buttery roll inspired by traditional German stollen, these rolls are filled with a blend of dried fruits, chopped almonds, and warm spices, perfect for holiday celebrations or cozy breakfasts.
Ingredients
Dough
- 3 cups all-purpose flour
- 2 ¼ teaspoons instant yeast
- ¼ cup sugar
- ¾ cup warm milk
- ¼ cup melted butter
- 1 large egg
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt

- ½ cup dried fruits (raisins, cranberries, candied citrus peel)
- ¼ cup chopped almonds
- Powdered sugar for dusting
Instructions
- Combine Wet Ingredients and Yeast: In a large mixing bowl, whisk together the warm milk, instant yeast, sugar, melted butter, egg, ground cinnamon, ground nutmeg, and salt until fully combined and slightly frothy.
- Add Dry Ingredients and Mix: Gradually incorporate the flour, dried fruits, and chopped almonds into the wet mixture. Stir until a rough dough forms.
- Knead the Dough: Turn the dough onto a floured surface and knead it for about 8-10 minutes until smooth, elastic, and no longer sticky.
- First Rise: Place the dough in a greased bowl, cover with a clean towel or plastic wrap, and let it rise in a warm spot for 1 to 1½ hours, or until doubled in size.
- Shape Rolls: Punch down the risen dough and divide it into 12 equal portions. Shape each into a round roll and place them evenly spaced on a baking sheet lined with parchment paper.
- Second Rise: Cover the rolls lightly and let them rise again for about 30 minutes, until puffy.
- Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 15 to 18 minutes until golden brown and cooked through.
- Cool and Dust: Remove the rolls from the oven and allow them to cool on a wire rack. Once cool, dust generously with powdered sugar.

- For a more traditional stollen flavor, you can stuff the rolls with a small piece of marzipan before baking.
