These Superfood Protein Bars are a no-bake, gluten-free, paleo-friendly, and nut-free snack packed with nutrient-dense ingredients like hemp seeds, goji berries, and sunflower seeds. Naturally sweetened with dates and topped with a rich chocolate layer, these protein bars make the perfect healthy snack or post-workout bite!
Ingredients
Base:
½ cup unsweetened shredded coconut
¼ cup raw sunflower seeds
¼ cup raw pumpkin seeds
¼ cup hemp seeds
4 Medjool dates
2 tbsp goji berries
¼ cup protein powder (chocolate maca protein recommended)
2 tbsp collagen peptides (omit for vegan)
1–3 tbsp water*
Topping:
⅓ cup dark chocolate chips
2 tbsp sunflower seed butterPaleo Chocolate Chip Mug Cake (Made with Almond Pulp)

Instructions
Line an 8″ x 4″ loaf pan with parchment paper.
In a food processor, combine all base ingredients and blend until sticky and well combined. The mixture should hold together.
Press the mixture firmly into the prepared loaf pan.
Melt the chocolate chips, stir in sunflower seed butter, and spread over the base layer.
Sprinkle cacao nibs on top.
Chill for at least 30 minutes in the refrigerator before slicing into bars.
Notes
Omit collagen peptides for a vegan version.
Adjust water as needed to bind the mixture (start with 1 tbsp).
Store bars in the fridge for up to 1 week or freeze for longer storage.
Use your favorite protein powder for different flavors.
