Description

Ingredients

4 boneless, skinless chicken breasts

1/4 cup cornstarch

2 tablespoons vegetable oil

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon grated ginger

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Season the chicken breasts with salt and pepper. Coat each chicken breast in cornstarch, ensuring an even layer on all sides.

  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and place it on the prepared baking sheet.

  4. In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, grated ginger, garlic, and red pepper flakes (if using).

  5. Pour the sauce over the chicken breasts and place the baking sheet in the oven. Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

  6. Once cooked, remove the chicken from the oven and let it rest for a few minutes before slicing.

  7. Serve the Sweet Chili Chicken over rice or with steamed vegetables and enjoy!

Adjust the spice level by increasing or decreasing the red pepper flakes.
