Ingredients
4 boneless, skinless chicken breasts
1/4 cup cornstarch
2 tablespoons vegetable oil
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon grated ginger
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
-
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
-
Season the chicken breasts with salt and pepper. Coat each chicken breast in cornstarch, ensuring an even layer on all sides.
-
Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and place it on the prepared baking sheet.
-
In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, grated ginger, garlic, and red pepper flakes (if using).
-
Pour the sauce over the chicken breasts and place the baking sheet in the oven. Bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
-
Once cooked, remove the chicken from the oven and let it rest for a few minutes before slicing.
-
Serve the Sweet Chili Chicken over rice or with steamed vegetables and enjoy!
Notes
Adjust the spice level by increasing or decreasing the red pepper flakes.
-
For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
-
Add vegetables like bell peppers or snap peas for extra flavor.
