Instructions
- Heat the oil: Heat olive oil in a large pot over medium heat to prepare for sautéing.
- Sauté onion: Add diced onion and cook for 4–5 minutes until softened, creating a flavorful base.
- Add garlic: Stir in minced garlic and cook for 30 seconds until fragrant to enhance aroma.
- Add main ingredients and spices: Add diced sweet potatoes, black beans, vegetable broth, cumin, chili powder, smoked paprika, salt, and black pepper to the pot.
- Bring to boil: Increase heat to bring the mixture to a boil before reducing to simmer.
- Simmer soup: Reduce heat to low, cover the pot, and cook for 20–25 minutes until sweet potatoes are fork-tender.
- Blend soup: Use an immersion blender to partially blend the soup, leaving some chunks for texture and heartiness.
- Finish with lime juice: Stir in the juice of one lime and adjust seasoning as needed to brighten flavors.
- Serve: Serve the soup warm, topped with optional avocado, cilantro, sour cream or yogurt, and tortilla strips if desired.
