Ingredients
Meat Mixture

Biscuit Mixture
- 1 can (16 oz) refrigerated biscuit dough, cut into quarters
- 1 cup salsa (or enchilada sauce)
- 1 cup canned black beans, rinsed and drained (optional)
- 1 cup frozen corn (optional)
Cheese & Toppings
- 2 cups shredded Mexican blend cheese
- Toppings: sour cream, shredded lettuce, diced tomatoes, jalapeños, cilantro
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned. Drain any excess fat to keep the dish from being greasy.
- Add Seasoning and Simmer: Stir in the taco seasoning and water, then let the mixture simmer for 2 to 3 minutes until it thickens and the flavors meld together.
- Combine Ingredients: In a large bowl, mix the cooked seasoned beef with salsa, black beans, and corn if using. Then add the quartered biscuit dough pieces and toss everything to coat the dough evenly with the mixture.
- Assemble the Casserole: Pour the combined mixture into the prepared baking dish and spread it out evenly for uniform cooking.
- Add Cheese Topping: Generously sprinkle the shredded Mexican blend cheese over the entire casserole to create a melty topping.
