Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Pasta: Cook the pasta according to the package instructions until al dente, then drain and set aside to keep warm.
  3. Brown Ground Beef and Onions: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and onions are softened. Drain any excess grease from the skillet.
  4. Add Seasoning and Simmer: Stir in the taco seasoning packet and 1/2 cup water, then let the mixture simmer for 2–3 minutes to enhance the flavors and allow the sauce to thicken slightly.
  5. Combine Ingredients: Add the rinsed black beans, drained corn, salsa, and cooked pasta into the skillet and stir everything together until well combined.
  6. Mix in Cheese: Stir in 1 cup of the shredded cheese evenly through the mixture.
  7. Assemble Casserole: Transfer the combined mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining 1 cup of shredded cheese on top.
