Description
Taco soup is a hearty, comforting one-pot meal loaded with seasoned ground beef, beans, corn, and tomatoes. It combines bold taco flavors in an easy, cozy soup—perfect for busy weeknights or game day gatherings.
Ingredients
Main Ingredients
- 1 lb ground beef (or ground turkey)
- 1 tablespoon olive oil (if needed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (1 oz) packet taco seasoning
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can Rotel (diced tomatoes with green chilies)
- 2 cups beef or chicken broth
Optional Toppings
- Shredded cheese
- Sour cream
- Avocado
- Tortilla chips
- Green onions
- Cilantro
Instructions
- Brown the Meat: Heat a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed to keep the soup from being oily.
- Sauté Aromatics: Add diced onion and minced garlic to the pot with the meat. Cook for 2 to 3 minutes until the onion softens and the garlic is fragrant, enhancing the depth of flavor.
- Add Taco Seasoning: Stir in the packet of taco seasoning thoroughly to combine it evenly with the meat and aromatics, infusing the base of the soup with classic taco spices.
- Add Beans, Veggies, and Broth: Pour in the drained black beans, kidney beans, corn, diced tomatoes, Rotel (diced tomatoes with green chilies), and 2 cups of beef or chicken broth. Stir well to combine all ingredients.
- Simmer the Soup: Bring the mixture to a gentle simmer. Reduce heat to low and let it simmer uncovered or partially covered for 20 to 25 minutes, stirring occasionally to meld flavors and heat through the ingredients.
- Adjust Seasoning and Serve: Taste the soup and adjust seasoning if needed, adding salt or pepper to your preference. Serve warm with your choice of optional toppings like shredded cheese, sour cream, avocado, tortilla chips, green onions, or cilantro for added texture and flavor.
Notes
- For a thicker consistency, simmer the soup uncovered for the last 5 to 10 minutes to reduce excess liquid.
- Swap ground beef for ground turkey or chicken for a lighter, leaner version of the soup.
- This soup tastes even better the next day after the flavors have melded overnight.
- Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months to enjoy later.
